Our Story

Founded by two passionate chocolate makers, Billycart began with a simple mission — to make chocolate great again. We wanted to celebrate the beauty of true bean-to-bar chocolate making, showcase the incredible flavours hidden within cocoa beans, and bring back the nostalgic recipes and treats we all know and love. Simple ingredients, carefully crafted, with flavour and passion at the heart of everything we do.

Our story began in two different places.

Working independently from our home kitchens, we each became captivated by the craft of chocolate making. Countless hours were spent roasting beans, refining recipes, tasting, learning, and chasing the perfect chocolate experience.

In November 2025, Max founded Trilby’s Chocolates at his family’s winery, where he began creating a range of chocolate bars made from just two ingredients: cocoa beans and sugar. His focus was simple — let great cocoa speak for itself.

Meanwhile, Alice was following her own chocolate journey, exploring bean-to-bar chocolate making while building a flower and animal farm in the rolling hills of Willunga.

Then, in early 2026, our paths crossed.

What began as a conversation quickly turned into many. We discovered a shared vision for what chocolate could be — transparent, handcrafted, flavour-driven, and deeply connected to people and place. Before long, we realised we weren’t building separate dreams at all. We were building the same one.

Together, we created Billycart Chocolate.

Today, our small chocolate factory sits beneath towering gum trees on a farm at Willunga Hill, surrounded by wildflowers, rolling hills, and a collection of much-loved fluffy animals. It’s a place where craftsmanship, curiosity, and creativity come together.

Every bar we make begins with carefully sourced cocoa beans and a commitment to honouring the entire bean-to-bar process. We believe great chocolate should tell a story — of its origin, the people who made it, and the moments it helps create.

Billycart Chocolate is more than a factory. It’s a place of joy, discovery, and connection. A place where old favourites are reimagined, where visitors can experience the magic of chocolate making firsthand, and where every bite is made with a whole lot of love.
